    This might seem like a novice question, but do you keep a bunch of salt in the pinch bowl and leave it out with the rest of your seasonings? Do you keep salt in the little bowl and keep it covered? Or do you refill the bowl of salt every time you cook?

    So, the only nice knife I own is my chef’s knife…If you invest in a few good knives, and take care of them, they will last forever. Also, it’s SO much easier and takes less effort to cut with a good quality knife (that’s sharp) than a cheap one.

    I think you could do another channel just on kitchen essentials. Most curious for me, and possibly another ‘Basice with Babish, is rolling pins. Part of my interest in them is professional, though I am retired, I have several wood lathes. The personal choices for rolling pins seems to be almost as varied as the cooks that use them. Other than wanting only sugar/hard maple or birch, and now maybe the bamboo, the shapes are vastly different from straight cylinders, to tapered from the centers. I have seen them from about 2 inches for pot stickers to 3 feet long for some specialty Japanese noodles. Comment?????
